Tasty and healthy. This is great barbecue food
INGREDIENTS
2 lb. leg of lamb
1 tbsp olive oil
1/2 lemon Salt and pepper 1 medium onion, sliced 2 medium tomatoes, sliced Bay leaves Green pepper (optional) Aubergine (optional)
Method: 1. Cu the meat into 1 - inch cubes. 2. Mix the oliveoil and the lemon juice and rub the mixture into the lamb. 3. Place the lamb in a dish and sprinkle with salt and pepper. 4. Cover with slices of onion and tomatoes and a few bay leaves. Rest in the refrigerator for 4 or 5 hours.
5. Arrange the chunks of meat on skewers, alternating with the tomatoes, onion, peppers and aubergine if using. Add an occasional bay leaf. 6. Place the kebabs on the barbecue until cooked through and slightly charred. They may also be cooked over an open wood fire of in an oven broiler. |
